96 • PRACTICAL ADVICE6.1 • PREHEATING THE OVENThe oven preheating cycle is extremelyi m p o r t a n t a n d u s e f u l f o r s u c c e s s f u lcooking.As a general rule, always preheat the cavitywhen empty, setting the temperaturebetween approximately 15% and 25%higher than that to be utilized subsequentlyin cooking.In the case of steam cooking, preheat theempty cavity using convection mode asthis will allow temperatures of over 130 °Cto be selected.6.2 • COOKING LOADSThe depth of the pan must be suitable forthe height of the food.For even cooking, it is preferable todistribute the load over several shallowpans rather than loading just one extremelydeep pan.Keep to the weights specified in thefollowing table:6.3 • FROZEN/DEEP-FROZEN PRODUCTSThe oven must be preheated and loadedrespecting the quality and nature of thesefoods. For example, frozen spinach mustnot be hit with temperatures that are toohigh as, due to its nature, it could dry outon the outside and impair the result.6.4 • TYPES OF CONTAINERFor optimum results, it is indispensable touse the right pan for the different kindsof food: aluminium or aluminium platepans for confectionery and baked foods,perforated pans for steam cooking, meshpans for pre-fried foods such as potatoes.6.5 • CLEARANCE BETWEENCONTAINERSWhen loading the oven with the food tocook, it is recommended to pay specialattention there is sufficient clearancebetween containers.
