Chlorides are also commonly found in hard water,salts and household and industrial cleaners. If cleaners containingchlorides are used, be sure to rinse repeatedly and dry thoroughlyupon completion.Routine cleaning of stainless steel can be done with soap and water.Extreme stains or grease should be cleaned with a non-abrasivecleaner and plastic scrub pad. It is always good to rub with the grainof the steel. There are also stainless steel cleaners available whichcan restore and preserve the finish of the steels protective layer.Early signs of stainless steel breakdown can consist of small pits andcracks. If this has begun, clean thoroughly and start to apply stainlesssteel cleaners in attempt to restore the passivity of the steel.Never use an acid based cleaning solution! Many food productshave an acidic content which can deteriorate the finish. Be sure toclean ALL food products from any stainless steel surface. Commonitems include, tomatoes, peppers and other vegetables.For proper start up, verify that the thermostat is in the OFF positionprior to connecting the unit to its power source. This will eliminateany possible electrical issues. Failure to start the unit with thethermostat in the OFF position could lead to motor failures as well asother electrical component failure.The thermostat also has an OFF position that disconnects power to thecondensing unit, keep in mind the evaporator fans and lights will stillhave power while the thermostat is in the OFF position. On freezerunits the lights and defrost timer will still have power as well as thecondensate heating elements. During normal operation the freezertemp is preset at approximately 0°F and the refrigerator is preset atapproximately 37°F.ELECTRONIC CONTROLS ONLYAfter plugging the unit in and turning the power switch to ON theunit will then begin to operate. For standard units verify that thethermostat is in the off position prior to plugging the unit in. Oncepower is connected the thermostat can be set to the 3 or 4 positionfor normal operation.1. Turn the main power switch, located on the top of the control boxto the ON position. Turn the night position switch, on the front ofthe control box, to the ON position.2. Adjust the temperature control to the desired temperature.The green area on the scale represents the optimum food holdingtemperature zone of 150°F to 170°F (66°C to 77°C). When the cabinetis warmed up and the temperature stabilized, the cabinet temperaturewill normally stay within a few degrees of the temperature controlset point. The display shows a precise measurement of the actual airtemperature within the cabinet, not an average reading. Therefore,it is not unusual to see the temperature vary when the doors areopened. The quick response of the heating system combined with theprecision temperature readings provide very accurate control of thecabinet temperature.3. The light switch (on the glass door models only) controls thedisplay lights inside the cabinet.The unit is now operating and the display will continually show thecurrent interior cabinet temperature. The night power switch on thefront of the control box should be used to turn the unit off at night.This removes latent heat from the heated module preventing high limitlock out. If desired, the main power switch can be turned to the offposition once the fan has turned off. Approximately 3 minutes.The cabinet interior is very hot! Avoid direct contactwith skin; use appropriate protective apparel,such as gloves. The area near the heating ductwill be hotter than the rest of the cabinet. Neveroperate the unit without the duct in place. Useonly containers and materials suitable for hightemperature applications. Never store combustiblematerials near the heating appliance.Removal of the Heated Module1. Disconnect power.2. Disconnect power harness.3. First, we need to understand the properties ofstainless steel. Stainless steel contains 70-80% iron which will rust.It also contains 12-30% chromium which forms an invisible passivefilm over the steels surface which acts as a shield against corrosion.As long as the protective layer is intact, the metal is still stainless. Ifthe film is broken or contaminated, outside elements can begin tobreakdown the steel and begin to form rust or discoloration.Proper cleaning of stainless steel requires soft cloths or plasticsouring pads.NEVER USE STEEL PADS, WIRE BRUSHES ORSCRAPERS!Cleaning solutions need to be alkaline based or non-chloride cleaners.Any cleaner containing chlorides will damage the protective film ofMAINTENANCE
