49-80685 11Your new oven has a variety of cooking modes to help you get the best results. These modes are described below.Refer to the Cooking Guide section for recommendations for specific foods. Remember, your new oven may performdifferently than the oven it is replacing.Baking and Roasting ModesSelect a mode for baking and roasting based on thetype and quantity of food you are preparing. Whenpreparing baked goods such as cakes, cookies, andpastries always preheat the oven first. Follow reciperecommendations for food placement. If no guidelinesare provided, center food in the oven.Traditional BakeThe traditional bake mode is intended for single rackcooking. This mode uses heat primarily from the lowerelement but also from the upper element to cookfood. To use this mode press the Bake pad, enter atemperature, and then press Start. Preheating is generallyrecommended when using this mode.Convection Bake 1 RackThe Convection Bake 1 Rack mode is intended forsingle rack cooking. This mode uses heat from thelower element and also the upper and rear elements,along with air movement from the convection fan toenhance evenness. Your oven is equipped with AutoRecipe Conversion, so it is not necessary to convert thetemperature when using this mode. To use this modepress the Convection Bake (1 Rack/Multi) once, entera temperature, and then press Start. Preheating isgenerally recommended when using this mode.Convection Bake Multi RackThe Convection Bake Multi Rack mode is intendedfor baking on multiple racks at the same time. Thismode uses heat primarily from the rear element butalso heat from the upper and lower elements, alongwith air movement from the convection fan to enhancecooking evenness. Your oven is equipped with AutoRecipe Conversion, so it is not necessary to convert thetemperature when using this mode. Baking time mightbe slightly longer for multiple racks than what would beexpected for a single rack. To use this mode press theConvection Bake (1 Rack/Multi) pad twice, enter atemperature, and then press Start. Always preheat whenusing this mode.Convection RoastThe Convection Roast mode is intended for roastingwhole cuts of meat on a single rack. This mode uses heatfrom the lower, upper, and rear elements along with airmovement from the convection fan to improve browningand reduce cooking time. It is not necessary to converttemperature. Check food earlier than the recipe suggestedtime when using this mode or use a meat probe. To usethis mode press the Convection Roast pad, enter atemperature, and then press Start. It is not necessary topreheat when using this mode.Broiling ModesAlways broil with the door closed. The broil element inthis oven is very powerful. Monitor food closely whilebroiling. Use caution when broiling on upper rackpositions as placing food closer to the broil elementincreases smoking, spattering, and the possibility of fatsigniting. For best performance center food below the broilheating element. Broiling on rack position 6 is notrecommended.Try broiling foods that you would normally grill. Adjustrack positions to adjust the intensity of the heat to thefood. Place foods closer to the broil element when aseared surface and rare interior is desired. Thicker foodsand foods that need to be cooked through should bebroiled on a rack position farther from the broiler or byusing Broil Lo.Broil HiThe Traditional Broil Hi mode uses intense heat fromthe upper element to sear foods. Use Broil Hi for thinnercuts of meat and/ or foods you prefer less done on theinterior. To use this mode press the Broil pad once andthen press Start. It is not necessary to preheat whenusing this mode.Broil LoThe Traditional Broil Lo mode uses less intense heat fromthe upper element to cook food thoroughly while alsoproducing surface browning. Use Broil Lo for thicker cutsof meat and/or foods that you would like cooked all theway through. To use this mode press the Broil pad twiceand then press Start. It is not necessary to preheat whenusing this mode.ProofProof mode is designed for rising (fermenting andproofing) bread doughs. Press the Proof pad and thenpress Start. Cover dough well to prevent drying out.Bread will rise more rapidly than at room temperature.WarmWarm mode is designed to keep hot foods hot for up to 3hours. To use this mode, press the Warm pad then pressStart. Cover foods that need to remain moist and do notcover foods that should be crisp. Preheating is not required.Do not use warm to heat cold food other than crispingcrackers, chips or dry cereal.
