10 49-80656-2USING THE OVEN: Cooking Modes / CookwareYour new oven has a variety of cooking modes to help you get the best results. These modes are describedbelow. Refer to the Cooking Guide section for recommendations for specific foods. Remember, your new ovenmay perform differently than the oven it is replacing.BakeThe bake mode is for baking and roasting. This modeuses heat primarily from the lower element but also fromthe upper element to cook food. When preparing bakedgoods such as cakes, cookies, and pastries alwayspreheat the oven first. Follow recipe recommendationsfor food placement. If no guidelines are provided centerfood in the oven. To use this mode press the Bake pad,enter a temperature, and then press Start.ProofProof mode is designed for rising (fermenting andproofing) bread doughs. Press the Proof pad and thenpress Start. Cover dough well to prevent drying out.Bread will rise more rapidly than at room temperature.Note that for double wall ovens, proof can not be runwhen running a clean mode in the lower oven.WarmWarm mode is designed to keep hot foods hot for up to3 hours. To use this mode, press the Warm pad thenpress Start. Cover foods that need to remain moist anddo not cover foods that should be crisp. Preheating isnot required. Do not use warm to heat cold food otherthan crisping crackers, chips or dry cereal. It is alsorecommended that food not be kept warm for morethan 2 hours.Broiling ModesAlways broil with the door closed. The broil element inthis oven is very powerful. Monitor food closely whilebroiling. Use caution when broiling on upper rackpositions as placing food closer to the broil elementincreases smoking, spattering, and the possibility offats igniting. For best performance center food belowthe broil heating element. Broiling on rack position 6is not recommended.Try broiling foods that you would normally grill. Adjustrack positions to adjust the intensity of the heat to thefood. Place foods closer to the broil element when aseared surface and rare interior is desired. Thickerfoods and foods that need to be cooked through shouldbe broiled on a rack position farther from the broiler orby using Broil Lo.Broil HiThe Broil Hi mode uses intense heat from the upperelement to sear foods. Use Broil Hi for thinner cutsof meat and/ or foods you prefer less done on theinterior. To use this mode press the Broil pad onceand then press Start. It is not necessary to preheatwhen using this mode.Broil LoThe Broil Lo mode uses less intense heat from theupper element to cook food thoroughly while alsoproducing surface browning. Use Broil Lo for thickercuts of meat and/or foods that you would like cookedall the way through. To use this mode press the Broilpad twice and then press Start. It is not necessary topreheat when using this mode.Cooking ModesCookwareCookware GuidelinesThe material, finish, and size of cookware affect bakingperformance.Dark, coated and dull pans absorb heat more readilythan light, shiny pans. Pans that absorb heat morereadily can result in a browner, crisper, and thicker crust.If using dark and coated cookware check food earlierthan minimum cook time. If undesirable results areobtained with this type of cookware consider reducingoven temperature by 25º F next time.Shiny pans can produce more evenly cooked bakedgoods such as cakes and cookies.Glass and ceramic pans heat slowly but retain heat well.These types of pans work well for dishes such as piesand custards.Air insulated pans heat slowly and can reduce bottombrowning.Keep cookware clean to promote even heating.
