Merely apply a lightedmatch or taper to the pilot until it lights, then adjust the pilotvalve. If the pilot will not light, close the adjustment valvecompletely, do not use that burner, and call for service.NOTE: It may be necessary to re-light the pilots severaltimes until the new lines are purged of any trapped air andconstant gas flow is attained.Shut Down1. Turn top burner valves clockwise to “OFF” position.2. When shutting down for periods longer than overnight,turn the manual ON/OFF valve on the incoming serviceline “OFF”. Close all pilot adjusting screws (right-hand turnall the way in).Final PreparationNew units are wiped clean with solvent at the factory toremove any visible signs of dirt, oil, grease, etc., remainingfrom the manufacturing process. They should be washedwith hot, soapy water to remove any solvent or oil residue orinstallation dust or debris before using for food preparation.CLEANING AND MAINTENANCEAny piece of equipment works better and lasts longer whenmaintained properly and kept clean. Cooking equipment isno exception. Your Garland Char-Broiler must be kept cleanduring the working day and thoroughly cleaned at the endof each day.WARNING: If gas odors are detected, the gas supply mustbe turned “OFF” at the main shut-off valve and the localgas company or authorized service agency contacted forservice.Daily-GXC Series1. Remove the broiler grates. Wire brush them clean ofany encrusted materials and wash in hot, soapy water. Acommon cleaning practice is to turn grates upside-downto burn off encrusted material. Do not do this with thechar-broiler! It is likely that cooked on matter will cook ineven deeper rather than burn off.2. With the grates removed, turn over all the briquettes onthe ceramic coal model.3. Remove the perforated screen, drip pan, and grease canand clean thoroughly.Daily-GXR Series1. Do not do this with theradian char-broiler! The flame from the burner is shieldedby a cast iron radiant, with the result that heat not flamereaches the grate. If is likely that cooked-on-matter willcook in even deeper rather than burn off.2. Remove the radiants and wire brush them clean, thenwash in hot soapy water. A rule of thumb is that if thegrates are becoming encrusted, so are the radiants.3. The Garland Char-Broiler uses a double drip tray. Thefront grease trough (at the top of the unit) downspoutsto a 3-5/8” tray running the width of the body; remaininggrease which drips past the radiants is connected by asecond pan covering the reminder of the broiler bottom.The front tray must be checked frequently duringoperation and drained as necessary; the rear drip panshould also be checked occasionally. Spills should bewiped as they occur and, at the end of the day, both pansshould be washed in hot, soapy water.
