It is important to clean the grates periodically duringdaily operations, using the tool provided or any othercleaning tool of preference. Cleaning the grates asneeded throughout the day will limit the effects ofgrease accumulation, which include excess smoke; flareups; fires and sub-par product.2. The grease trough and chute should be kept cleanduring daily operations to prevent grease fromaccumulating near the cook surface. If necessary, stagnant grease and/or food particles should bedirected to the grease chute using a standard 3” wideturner. If necessary, this turner can also be used to pushitems/grease in the grease chute down into the greasedrawer.3. The grease drawer(s) should be emptied periodicallyduring daily operations. Every environment differs,so the frequency of this action will vary depending onamount and type of product being cooked. Keeping theamount of grease in the drawer to a minimum greatlyreduces the chance of flare ups and sustained fire.
