This Jenn-Air grill has an infrared side burner –commonly referred to as a “searing” burner. Thistype of burner produces extreme heat that can beused to “sear” the outside of food thus locking thejuices inside. This process is used at manyupscale restaurants to improve the flavor of thefood. To properly use, cook each side of the meatfor 1-2 minutes on the searing side burner and thenmove to the meat to the main cooking surface tofinish cooking the inside to your choice.The preparation of meat, whether rare, medium, orwell done, is affected to a large degree by thethickness of the cut.The cooking time is affected by the type of meat,the size and shape of the cut, the temperature ofthe meat when cooking begins, and the degree ofpreparation desired.It is recommended that meat be defrosted overnightin the refrigerator as opposed to a microwave.
