17Defrosting and CookingDefrosting and cooking using the Circotherm vImportant heating system information:❑ For defrosting and cooking of frozenfoods, use circotherm.❑ With all frozen foods, follow the foodmanufacturers instructions on thepackage.❑ As a rule, defrosted frozen foods(especially meats) require less cookingtime than fresh products, since freezinghas a pre-cooking effect.❑ If frozen meat is placed in the oven, thedefrosting time must be added to therequired cooking time.❑ Always defrost frozen poultry beforecooking because the giblets must beremoved.❑ For cooking frozen fish, use the sametemperatures as for fresh fish.❑ Frozen ready-to-eat meals inaluminium dishes may be placed intothe oven several at a time.❑ Frozen vegetables (i.e., when cookingcomplete meals) should be cooked in acovered pot together with the roast. Useonly approximately half of the liquidspecified in the recipe. Use fat only foradding flavour.Gentle defrosting: kRecommended for delicate pastries only(i.e., whipped-cream gateaus).❑ Turn the function selector switch to thek position. Dependent on size and typeof the baked goods, defrost 25 – 45minutes, take out of the oven and allowto stand 30 – 45 minutes.❑ With smaller amounts (pastries), thedefrosting time is reduced to 15 – 20minutes and the subsequent standingtime to 10 – 15 minutes.Standard defrosting of various foods:Shelf-in levels:With 1 baking sheet: Slide-in level 3With 2 baking sheets: Slide-in levels 1 and 3❑ All stated times are approximateguidelines that vary with the shape andvolume of frozen products.❑ Raw frozen products or foods from afreezer always defrost at 50° C.Higher defrosting temperatures maycause the food to dry out.❑ Defrost frozen meals packed inaluminium foil or closed aluminiumcontainers at a setting of 130 – 140° C.❑ Place frozen meals packed in plasticbags or plastic containers in a potfilled with water. Cover the pot anddefrost of 130 – 140° C.Attention: Pot handles must be oven-proof.❑ Defrost and warm up frozen bakedgoods at 100 – 140° C. Brush bread,rolls or yeast pastry lightly with egg tomake the crust more appealing.❑ Defrost dry frozen yeast cakes at160 – 170° C for 20 – 30 minutes.❑ Defrost moist frozen yeast cakes (withfruit topping) at 160 – 170° C for30 – 50 minutes after wrapping inaluminium foil to prevent cake fromdrying out.❑ Defrost and toast frozen toast (withtopping) at 160 – 170° C for about20 minutes.❑ Defrost and bake frozen pizzas at 180 –190 °C for 15 – 25 minutes.Place on wire grill covered withgreaseproof paper.Please ensure that the greaseproofpaper is suitable for use at thesetemperatures.
