Light the rearburner as described in the lighting instructions, see page 25-26. Once lit, the rotisserie burnerwill reach cooking temperatures in about 1minute.Operating InstructionsGENERAL USE OF THE GRILL ANDROTISSERIEEach main burner is rated at 10,000 Btu/hr.The main grill burners encompass the entirecooking area and are side ported tominimize blockage from falling grease anddebris. Above the burners are porcelaincoated steel radiant (flame tamer). Theigniter knobs are located on the lower centerportion of the valve panel. Each rotaryigniter is labeled on the control panel.USING THE GRILLGrilling requires high heat for searing andproper browning. Most foods are cooked atthe “HI” heat setting for the entire cookingtime. However, when grilling large pieces ofmeat or poultry, it may be necessary to turnthe heat to the lower setting after the initialbrowning. This cooks the food throughwithout burning the outside. Foods cookedfor a long time or foods basted with a sugarymarinade may need the lower heat settingnear the end of the cooking time.NOTE: This stainless steel grill is designedto grill efficiently without the use of lavarocks or briquettes of any kind. Heat isradiated by the stainless steel flame tamerspositioned above each burner.NOTE: The hot grill sears the food, sealingin the juices. The longer the preheat, thefaster the meat browns and the darker thegrill marks.
