BURNER GRATESThe burner grates are heavy cast iron. They weredesigned in sections to make them easier to removeand clean. (See fig. 05 & 06)COOKWAREFor best results we recommend using professionalcookware.This type of utensil can be found at your finerdepartment stores, specialty cooking shops, orrestaurant supply stores. If using regular cookware, bevery careful if the pans have plastic handles, as theselarge professional size burners can flame up on theoutside of the pan and melt or bubble the handles.CONTROL KNOBSThe control knobs are readily associated with theburners they control. The cooktop control knobs arelabeled and in front of the burners. The oven control isplaced slightly lower than the other control knobs. Thisis due to the physical size of the commercial typethermostats used on the product (see fig. 07).WOK RINGA Wok ring is provided with your new DCS appliance.The ring is cast iron, and has a porcelain enamel finish.It can be used with the DCS model CW wok and mostcommercially available woks. To use the ring, place it onthe grate over the desired burner. The vertical tabs onthe ring should be aligned with the main fingers of thegrate. The small protrusions on the bottom surface ofthe ring should straddle the grate fingers to prevent thering from rotating during cooking. See fig. 08 page 13.The bottom of the wok should be supported andretained by the vertical tabs of the ring.For best performance on 305 & 485 model ranges, thering and wok should be used on the center burner, as ithas the highest output on the top section. On 36” and48”ranges and cooktops, the ring and wok may be usedon any surface burner. To clean the wok ring, place it inthe dishwasher after use.
