11COOkTOp USEbURNER GRATESThe burner grates are heavy cast iron. They have aflat surface making it easy to move large pans fromone burner to another. They were designed insections to make them easier to remove and clean.(see Fig. 08 & 09)COOkWAREFor best results we recommend using professionalcookware. This type of utensil can be found atyour finer department stores, specialty cookingshops, or restaurant supply stores. If using regularcookware, be very careful if the pans have plastichandles, as these large professional size burners can flame up onthe outside of the pan and melt or bubble the handles.CONTROl kNObSThe control knobs are readily associated with the burners they con-trol. The cooktop control knobs are labeled and are in front of theburners. The oven controller is placed slightly lower than the othercontrol knobs. This is due to the physical size of the commercialtype thermostats used on the product (see Fig. 10).fig. 10WOk RING (purchase separately)A Wok ring is available as an accessory for your newdCs appliance. To purchase a wok ring accessory(model # WRs) for use on your range or cooktopplease contact an authorized dCs dealer. The ring iscast iron, and has a porcelain enamel finish. It can beused with the dCs model CW wok and most commer-cially available woks. To use the ring, place it on thegrate over the desired burner. The vertical tabs onthe ring should be aligned with the main fingers ofthe grate. The small protrusions on the bottom sur-face of the ring should straddle the grate fingers toprevent the ring from rotating during cooking. seeFig. 11.
