7USING YOUR MACHINE FOR THE FIRSTTIMEWhen you are using the machine for the first time, youshould wash all the accessories i.e. filter holder, steamnozzle etc in warm soapy water and rinse. To ensurebest tasting coffee the internal circuits must also beflushed through at least five times. To do this follow thedirections below in “How to prepare espresso coffee”but use only water and not coffee.HOW TO PREPARE ESPRESSO COFFEEFILLING THE WATER TANK:To remove the water tank lid (fig.2) simply pull upwards(fig 3) and fill the tank at the sink (fig 4). Do not exceedthe MAX level on the water tank. The tank may also befilled without removing it, simply by pouring water intoit directly from a jug.Replace the tank by connecting the valve at the bottomof the tank with the hole in the base on the machine.WARNING: it is completely normal for there to be waterin the compartment under the tank; as a result, thiscompartment should be dried using a clean sponge.Note: Do not operate the appliance without water inthe tank and always remember to fill the tank when thewater level goes below the MIN levelPREHEATING THE COFFEE MACHINETo ensure your espresso coffee is dispensed at the righttemperature it is essential that the coffee unit ispreheated. Turn the selector knob so that the indentedline on the selector knob points to the boiler on function(fig.5). Attach the empty filter holder (withoutcoffee) to the machine by positioning it under the boileroutlet with the handle towards the left (fig 6). (Be surethat the steam knob is firmly closed).2.Attach the empty filter holder (without coffee) to themachine by positioning it under the boiler outlet withthe handle towards the left (fig 5). Red light nextto will come on. Push upwards and at the sametime turn the handle as far right as possible. It doesnot matter if the handle is not centrally aligned withthe machine, as long as the filter holder is firmlyattached to the appliance.2.Position a cup under the filter holder. Use the samecup that the coffee will be served in, so that it may bepreheated.3.Wait until the orange “OK” light comes on (fig 7)and turn the selector knob to the espresso functionposition (fig 8) Allow water to flow until theorange “OK” light goes out, then stop the flow ofwater by turning the selector knob to the boiler onfunction (fig 5)4.Empty the cup, wait until the “OK” pilot light comeson again and repeat the whole operation one moretime.5.For optimum preheating, the selector knob can be leftin the “boiler on” position for approximately halfan hour before making any coffee.HOW TO PREPARE ESPRESSO COFFEE:Hints and Tips:• It is important to use a high quality ground coffeewith a fine grind in order to avoid the obstruction ofthe filter during the brewing.• It is important to ensure that the filter is clean beforefilling with coffee.• Tamping the coffee gives a better quality espresso. Ifyou press too hard, the coffee comes out slowly andthe cream is dark in colour. If on the other hand, thecoffee is not pressed enough, it will come out tooquickly and the cream will be light in colour.• Preheating the machine will ensure your coffee isdispensed at the correct temperature• Espresso is a strong dark coffee with a distinctivecaramel coloured froth, known as the “crema”.Espresso coffee is best served in small “demi-tasse”cups, with a half cup being the ideal serving (approx11/2 - 2 fl oz).1.After carrying out the preheating of the machine asdescribed in the preceding section, in order to makejust one cup of espresso coffee, insert the 1-cup filter(the smaller of the two provided) into the filter holder(Fig. 9) and fill it with one level measuring spoon ofground coffee – about 7 grams. If you wish toprepare two cups of espresso coffee, use the 2-cupfilter (the larger of the two provided) and fill it withtwo less-than-level measuring spoons of groundcoffee (about 6+6 grams).Note: use high quality, finely-ground coffee forespresso coffee makers.2.Distribute the ground coffee uniformly and press itlightly with the pressing pad (Fig. 11).3.Remove any excess coffee from the filter holder rimand attach the filter holder to the machine (fig. 6).4.Place the cup or cups (cups can be preheated by rinsingunder hot water) on the black part of the removable driptray (fig 12). Ensure that the cup or cups line up with thedispensing holes on the filter holder.5.Wait until the orange “OK” light comes on (fig 7)and turn the selector knob to the espresso functionposition (fig 8).
