14b. When using a solid shortening, eithermelt it first, or cut into small piecesand tightly pack it, leaving no airspaces and being careful not to disturbthe sensing bulbs.c. If equipped with a Melt Cycle Control,turn the melt cycle switch “ON” tomelt the shortening. The burners willcycle on and off until shortening hasmelted.d. If the fryer does not have a Melt CycleControl, turn the burners “ON” forabout ten seconds, “OFF” for aminute, etc., until the shortening ismelted. If you see any smoke comingfrom the shortening while melting thisway, shorten the “ON” cycle andlengthen the “OFF” cycle. Smokeshows that you are scorching theshortening and reducing its useful life.e. Before starting operation, turn theoperating thermostat to the probableworking temperature; wait for thetemperature to stabilize then checkwith a high-quality immersionthermometer.5. Clean all exterior surfaces of thecabinet. Do not use cleaners, steelwool, or any other abrasive material onstainless steel.c. Filter the cooking oil and replace ifnecessary. The oil should be filteredmore often than daily under heavy use.5.3 WEEKLYa. Completely drain the oil from the fryerinto either the filter or a steelcontainer. Close the drain valve and refillwith either a good commercialcleaning solution and water, orwater and strong detergent.2. Set the operating thermostat to104ºC (220ºF).
