The convection fancirculates the heated air evenly over andaround the food. Preheating is notnecessary with foods having a bake timeof over 15 minutes.Convection RoastnGood for large tender cuts of meat, uncovered.Heat comes from the top heatingelement. The convection fan circulatesthe heated air evenly over and aroundthe food. Meat and poultry are brownedon all sides as if they were cooked on arotisserie. Using the roasting rackprovided, heated air will be circulatedover, under and around the food beingroasted. The heated air seals in juicesquickly for a moist and tender productwhile, at the same time, creating a richgolden brown exterior.When you are convection roasting it isimportant that you use the broiler panand grid and the special roasting rack forbest convection roasting results. The panis used to catch grease spills and the gridis used to prevent grease spatters. Placethe meat on the special roasting rack.The rack holds the meat. The rack allowsthe heated air to circulate under themeat and increase browning on theunderside of the meat or poultry.n Place the grid on the broiler panand put the roasting rack over them,making sure the posts on the roastingrack fit into the holes in the broiler pan.In a convection oven, a fancirculates hot air over, under andaround the food.
