CONVECTION BAKINGAdapting Recipes For Convection BakingAs a general rule, reduce the temperature by 25°F.for convection baking. For more specific instructions,follow the guidelines in the Convection Cookbook.Preheating is not necessary with foods having a baketime of over 15 minutes.Check foods for doneness at the minimumsuggested cooking time.Use pan size recommended in the recipe.Some package instructions for frozen casseroles ormain dishes have been developed using commercialconvection ovens. For best results in this oven,preheat the oven and use the temperature on thepackage.For more information on adapting recipes, see theConvection Cookbook.How to Set Your Oven for Convection BakingDo not lock the oven door with the latchduring convection baking. The latch is used forself-cleaning only.To avoid possible burns, place the shelves in thecorrect position before you turn the oven on.1. Press the CONV. BAKE pad.2. Press the + or – pad. The last oven set temperatureappears in the display. Continue pressing until thedesired temperature is displayed.When the oven starts to heat, the word “ON” andthe changing temperature, starting at 100°F., will bedisplayed. When the oven reaches the temperatureyou set, a tone will sound.3. Press the CLEAR/OFF pad when bakingis finished.NOTE: You will hear a fan while cooking with thisfeature. The fan will stop when the door is opened butthe heat will not turn off.To change the oven temperature duringthe Convection Bake cycle, press the CONV.BAKE pad and then the + or – pad to get the newtemperature.CLEAROFFCONV.BAKEMulti-Shelf BakingBecause heated air is circulated evenly throughoutthe oven, foods can be baked with excellent resultson 2 or 3 shelves at a time. Multi-shelf baking mayincrease cook times slightly for some foods but theoverall result is time saved. Cookies, muffins,biscuits, and other quickbreads give very good resultswith multi-shelf baking.When baking on 3 shelves, divide the oven intothirds by placing the offset shelf in the second (B)shelf position and the straight shelves in first (A) andfourth (D) shelf position.For 2-shelf baking, place the straight shelves in theA and C positions.NOTE: When convection baking with only 1 shelf,follow the shelf positions recommended in the OvenShelves section of the Regular Baking section.ADBOffset shelf24
