BROILING GUIDE1. Always use the broiler pan and rack that comeswith your oven. It is designed to minimize smokingand spattering by trapping the juices in the shieldedlower part of the pan.2. The oven door should be open to the broilstop position.3. For steaks and chops, slash fat evenly around theoutside edges of the meat. To slash, cut crosswisethrough the outer fat surface just to the edge of themeat. Use tongs to turn the meat over to preventpiercing the meat and losing the juices.4.
