17Convection RoastingWall OvenConvection Roasting is good for roasting largetender cuts of meat, uncovered. Meat andpoultry are browned on all sides as if they werecooked on a rotisserie. When set on ConvectionRoast, the top element and the bake elementoperate whenever heating. (Fan operates.)Turn the Mode Selector Knob to NORMAL.Using the Temperature Control Knob, setthe desired temperature, up to 500°F.Turn the Oven Control Knob toCONVECTION ROAST.Check the food for doneness at theminimum time on the recipe. Cook longerif necessary.Turn the Oven Control Knob to OFF whenconvection cooking is finished.The OVEN ON light and the oven interiorlights turn on and remain on until the OvenControl Knob has been turned to OFF.The HEATING light will come on and stay onuntil the oven temperature reaches the pre-settemperature. This light will CYCLE on and offduring the remainder of the cooking process.NOTE:• You will hear a convection fan while cookingwith this feature.• A cooling fan will turn on to cool internalparts. The heated air seals in juicesquickly for a moist and tender interior while, atthe same time, creating a rich golden brownexterior.When you are convection roasting, it is importantthat you use the broiler pan and grid and thespecial roasting rack. The pan is used to catchgrease spills and the grid is used to preventgrease spatters, while the roasting rack allows theheated air to circulate under the meat andincrease browning on the underside of the meator poultry.• Place the grid on the broiler pan and put theroasting rack over them, making sure the postson the roasting rack fit into the holes in thebroiler pan.• Place meat on the roasting rack.• When convection roasting large cuts of meat,place the pan on either the Convection FloorRack or a rack in position A.Roasting rackGridPostBroiler pan
