Insert a thermometer in the center of the frypotwith the bulb about two inches below the surface. Allowthe burner to cycle about four times, the thermometerreading should be within ° of the thermostat knobsetting. If this does not agree with the pointer of thethermostat knob:1. Loosen the two set screws on the thermostatknob2. Set the pointer at the temperature indicated onthe thermometer,3. Tighten the set screws firmly.4. Be sure the black surface of the knob is spacedaway from the dial plate at least the thickness of adime.NOTE: DO NOT TURN ADJUSTING SHAFTMORE THAN TWO TURNS IN EITHERDIRECTION OR PERMANENT DAMAGECAN RESULT. THIS ACTION MAY VOID THESTANDARD WARRANTY.The Fenwal Thermostat is an electric switch with contactsthat open on a temperature rise. It will respond totemperature changes of approximately º when the fryeris idling with no food being fried.Turning the adjusting shaft counter-clockwise increasesthe temperature at which time the contacts will open. Some of the most common problems occur in connectionwith the pilot generator. These usually show as poorignition of the main burner or frequent pilot outage.Below is a diagram of how the Fenwal thermostat andHi-Limit controls are wired to the safety system.
