The initial investment in the frying systemis less than the total overall costs of oil during the lifeof the fryer, and with regular fi ltering, you can realizesubstantial savings in oil costs as well as mainte-nance charges.LIMITED CALIBRATION(Less than 25° difference)You will need:One screwdriver with 1/8"wide fl at bladeOne accurate fryerthermometer1. Set thermostat to desired frying temperature.2. Allow thermostat to cycle three times.2. Allow fryer to cycle three times.3. Place an accurate thermometer in the oil at thetip of the thermostat bulb.NOTE: Locate thermometer in same position forevery calibration.4. If calibration of fryer is found to be less than 25°Foff, simply loosen the four retaining screws hold-ing the dial plate in place. Reset the dial plate tomatch the thermometer reading. If the fryer is foundto be more than 25°F off, a qualifi ed service com-pany must be contacted to have the fryer properlycalibrated.DO NOT ADJUST THE THERMOSTAT SET SCREW - ITVOIDS ANY WARRANTY ON PART.THERMOSTAT BULB POSITIONINGBEFORE REPLACING, TEST THERMOSTATSNOTE: Operational problems can easily be correctedby thermostat bulb positioning.Keating’s patented thermostat application is accuratewithin 2°F of the dial setting between 250°F – 350°F.This accuracy is attained only if the thermostat bulbis placed properly against the heat transfer tube. Toquickly and accurately test for proper bulb placement,a single thickness of writing paper should be pulledthrough between the tube and the bulb with mediumresistance.*1. *For 14" IFM Fryers:• The end of thermostat bulb should touch theburner tube.1. For 18" & 20" IFM Fryers:• If the bulb is too loose, the paper will slipthrough with little or no resistance. A fryer witha thermostat bulb that is too loose willovershoot.Overshoot: The thermostat takes a long timeto cycle and then misses its preset temperatureby 20°F - 40°F yielding a poor quality product.overshoot.• If the bulb is too tight, the paper will either notpull through or it will tear. A fryer with athermostat bulb that is too tight will short cycle.Short Cycle: The thermostat will cycle rapidlywhile the fryer is in the idle mode; thetemperature will be erratic. SERVICEALL HI-LIMIT CONTROLS ARE PRESET AT THEFACTORY FOR A SPECIFIC TEMPERATURE. DO NOTATTEMPT TO CHANGE THE SETTING OF THE HI-LIMIT. IF THE HI-LIMIT FAILS TO SHUT OFF BETWEEN425°F AND 450°F DURING TESTING, IT MUST BEREPLACED.FLAME ADJUSTMENTA. Gas Pressure1. At gas valve, remove adjustment port cover, rotateadjustment screw with screwdriver and replace portcover.2. To check the gas pressure (3" WC for naturalgas or 10" WC for Propane at the manifold), use anallen wrench to remove the gas pressure test port,located in the center of the manifold.3. Line pressure (incoming pressure) is critical forproper ignition of the IFM.
