3Counter model and floor model fryers must berestrained to prevent tipping when installed in orderto avoid splashing, spilling, etc. of hot liquid. Therestraining method may be a manner of installation orby separate means.LEVELINGThe fryer will operate at its highest efficiency whenproperly leveled. Place a level on fryer vessel from sideto side. For fryers on legs, the bottom foot of the leg isadjustable. Turn counter clockwise to decrease heightor clockwise to increase height until level. For fryers oncasters, the casters are adjustable by loosening thejam nut and turning the caster in or out. When thedesired level is reached, tighten the jam nut.Adjustments of more than 3/4” are not recommendedon any caster. The same procedure should be followedto level the fryer from front to back.Figure 2-1RESTRAININGDEVICESOn fryer installations with casters, casters and jam nutsmust be completely tightened. Adequate means mustalso be provided to limit the movement of the appliancewithout depending on the connector, thequick-disconnect device or its associated piping to limitthe appliance movement.Connectors must comply with the current ANSIZ21.69/CAN 1 CAN/CGA 6.16 standard for connectorsfor movable gas appliances. The piping should be a minimum of 3/4”IPS supply pipe for a single fryer. Batteries requirelarger supply lines. Installation must conform with localcodes, or in the absence of local codes, with thecurrent National Fuel Gas Code ANSI Z223.1/NFPA54, Natural Gas Installation Code CAN/CGA-B149.1 orPropane Installation Code CAN/CGA-B149.2.
