16The Slow Cook OvenThe Slow Cook oven of your Excel cooker is intendedfor slow cooking items such as casseroles, joints ofmeat etc.Slow Cook Oven settingThe graduated temperature scale on the fascia allowsyou to either cook slowly for several hours or all daywhilst you are out.For long scale cooking select the cooler end of thescale and for a shorter cooking time select the hotterend of it.0Plate warming onlyExtendedslow cookingConventionalslow cookYour Slow Cook Oven is capable of cooking acomplete meal, for instance – casserole, rice puddingand jacket potatoes - or just warming the dishes (useonly heat resistant dishes.).Points to remember when Slow Cooking:· Pre-heat the oven for 20-30 minutes beforestarting to cook· Do not allow dishes to touch the heating elementseither side of the oven· Bring casseroles, soups etc to the boil on the hobbefore placing into a suitable casserole for slowcooking· Ensure that casseroles have sufficient liquid,particularly when cooking over a long period· Use lids on casseroles or foil to cover food whilst itis cooking to retain moisture· Make sure all dishes will fit into the oven beforepreparing the food· Wrap washed and pricked jacket potatoes in foilbefore cooking· Make sure that meat and poultry reach a safetemperature of at least 90ºC before eating· Always thaw frozen food completely beforecookingYour Slow Cook oven is also useful for warming platesand serving dishes (use only heat resistant dishes.).You can cook a fruitcake in the Slow Oven on themaximum heat setting (if perhaps your other ovensare in use). If you are using the fan oven below theSlow Cook Oven at the same time allow a little morecooking time.You can also produce crisp, white meringues cookedin the slow cook oven.Timings for cooking in the slow oven will dependupon the temperature, quantity and type of dish youare cooking, as a guide for casseroles, a minimum of 3hours cooking time is recommended.Keep an eye on the food until you are familiar withthe oven.
