11The OvensThe clock must be set to the time of day before the ovens willwork. See the following section on ‘The Clock’ for instructionson setting the time of day.References to ‘left-hand’ and ‘right-hand’ ovens apply asviewed from the front of the appliance.The left-hand oven is a multifunction oven (Fig. 2.12). Whilethe right-hand tall oven is a fan oven (Fig. 2.13).Fan ovens circulate hot air continuously, which meansfaster, more even cooking. The recommended cookingtemperatures for a fan oven are generally lower than thosefor a non-fan oven.Multifunction ovens have an oven fan and oven fan element,as well as two extra heating elements. One element is inthe top of the oven and the second is under the oven base.Take care to avoid touching the top element and elementdeflector when placing or removing items from the oven.The multifunction oven has 3 main cooking functions: fan,fan assisted and conventional cooking. These functionsshould be used to complete most of your cooking.The browning element and base heat can be used in thelatter part of the cooking process to fine tune the results toyour particular requirements.Use fanned grilling for all your grilling needs and defrost tosafely thaw small items of frozen food.Table 2.4 gives a summary of the multifunction modes.The multifunction oven has many varied uses. We suggestyou keep a careful eye on your cooking until you are familiarwith each function.
