9Operating Your Oven - The BasicsImportant Things to Know BeforeOperation• Dacor recommends turning the oven on for one hourat 500°F (260°C) to burn off any residual oils usedduring the manufacturing process. Any of these oilsleft on the inner parts can cause an undesirable smellthe first few times the oven is used.• When you use your oven in one of the convection, bake or roast modes, it preheats automatically. Thepreheat cycle rapidly brings the oven chamber up tothe proper cooking temperature. Wait for the ovento finish preheating (Insert Food appears on thedisplay) before placing the food in the oven. Excessivebrowning will occur if you put the food in the ovenwhile it is preheating.• While the oven is preheating the actual oven tempera-ture will appear on the display, next to the tempera-ture setting. It takes several minutes to preheat theoven. Preheat time depends on the temperature set-tings. The time may be longer depending on the typeof electrical supply in your community. There is nopreheat cycle for any of the broil modes.• After you pull food out of the oven, it will continue tocook. This process is called “carry-over.” The largerthe portion of food, the longer it will cook. It is bestto let meat rest for 10 to 15 minutes after it comesout of the oven before carving. Doing so will allow themeat to retain its juices and make it easier to carve.• After you turn off the oven, the cooling fans may con-tinue to run until the internal parts have cooled down.• Broil modes do not work with the meat probe con-nected.• This unit has been tested and found to comply withthe limits for a class B digital device, pursuant toPart 15 of the FCC rules.
