Also, be sure the pans do not toucheach other or the walls of the oven.Paper and PlasticHeat-resistant paper and plasticcontainers that are recommended foruse in regular baking can also be usedfor convection baking, but should notbe used at temperatures higher thanthe temperature recommended by thecookware manufacturer. Plastic cookwarethat is heat-resistant to temperatures of400°F can also be used.Metal and GlassAny type of cookware will work in yourconvection oven. However, metal pansheat the fastest and are recommendedfor convection baking. Darkened or matte-finished pans will bakefaster than shiny pans.
