General use of the grill and rotisserieEach main burner is rated at 12,000 BTU/hr. Themain grill burners encompass the entire cookingarea and are side ported to minimize blockage fromfalling grease and debris. Above the burners arestainless steel radiant (flame tamers). The igniterknobs are located on the lower center portion of thevalve panel. Each rotary igniter is labeled on thecontrol panel.USING THE GRILL:Grilling requires high heat for searing and properbrowning. Most foods are cooked at the “HI” heatsetting for the entire cooking time. However, whengrilling large pieces of meat or poultry, it may benecessary to turn the heat to a lower setting afterthe initial browning. This cooks the food throughwithout burning the outside. Foods cooked for along time or foods basted with a sugary marinademay need a lower heat setting near the end of thecooking time.To begin:1. Make sure the grill has been leak tested and isproperly located.2. Remove any remaining packing material.3. Light the grill burners using the instructions onpage 12.4. Turn the control knob(s) to “HI” and preheat thegrill for 15 minutes. The grill lid is to be closedduring the appliance preheat period.5. Place the food on the grill and cook to thedesired doneness. Adjust heat setting, ifnecessary. The control knob may be set to anyposition between “HI” and “LO”.NOTE: The grill is designed to grill efficientlywithout the use of lava rocks or briquettes of anykind. Heat is radiated by the stainless steel flametamers positioned above each burner.NOTE: The hot grill sears the food, sealing in thejuices. The longer the preheat, the faster the meatbrowns and the darker the grill marks.DO NOT LEAVE THE GRILL UNATTENDEDWHILE COOKING.USING ROTISSERIE BURNER:Your grill is capable of performing back burnerrotisserie cooking. Light the rear burner asdescribed in the lighting instructions, see page 12.Once lit, the rotisserie burner will reach cookingtemperatures in about 1 minute.The rotisserie motor is capable of turning up to a12lb. cut of meat or poultry. The motor slides ontothe stainless steel motor mount. The rotisseriemotor must be electrically grounded in accordancewith local codes or, in the absence of local codes,with the National Electrical Code, ANSI/NFPA 70-1990.The skewer for the rotisserie is assembled into themotor assembly by placing the pointed end into themotor, and then sliding the grooved bushing into theslot at the opposite side of the grill. Thethumbscrew for the grooved bushing should beinside the grill body. To load the skewer, begin withthe bushing screwed on the skewer rod at theopposite end from the point. Slide the counterbalance apparatus and tighten on the skewer rodapproximately 2-4” from the bushing. Slide the firstmeat fork onto the skewer rod prongs toward thefood. Center the product to be cooked on theskewer then push the meat forks firmly together.Tighten the wing nuts as tight as possible.It may also be necessary to wrap the food withbutchers string (never use nylon or plastic string) tosecure any loose portions. Once the food is secureinsert the skewer into the motor. It is normal for theskewer to flex when larger cuts of meat are beingcooked. It may also be necessary to remove thegrill rods for larger cuts of meat. If the meat scrapeson the grill rods during any part of the rotation, thegrill rods must be removed. Adjust the counterbalance weight to balance the heavier side of themeat and avoid lopsided rotation of the rotisseriemotor.After your first use of the rotisserie burner it is likelythat the stainless steel adjacent to the burner willdarken to a dark blue color. This is a normalproperty of the non-rusting, type 304 stainless steelused on the grill.CAUTION: REMOVE THE WARMING RACKWHEN USING THE ROTISSERIE BURNER. THEHIGH HEAT COMING FROM THE BURNER MAYCAUSE THE WARMING RACK TO BEND.WARNINGELECTRICAL GROUNDING INSTRUCTIONS.This appliance (rotisserie motor) is equipped with aplug and should be plugged directly into a properlygrounded receptacle. DO NOT cut or remove thegrounding prong from this plug.Keep the rotisserie motor electric cord away from theheated surfaces of the grill.
