12Cooking high moisture content foods can create a‘steam burst’, when the oven door is opened. Whenopening the oven stand well back and allow anysteam to disperse.When the oven is on, don’t leave the door open forlonger than necessary, otherwise the knobs may getvery hot.• Always leave a ‘fingers width’ between dishes onthe same shelf. This allows the heat to circulatefreely around them.• The Cook & Clean oven liners (see Cleaning yourcooker) work better when fat splashes are avoided.Cover meat when cooking.• To reduce fat splashing when you add vegetablesto hot fat around a roast, dry them thoroughly orbrush lightly with cooking oil.• If you want to brown the base of a pastry dish,preheat a baking tray for 15 minutes before placingthe dish in the centre of the tray.• Where dishes may boil and spill over duringcooking, place them on a baking tray.Multi-function oven functionsThe Multi-function oven has many varied uses. Wesuggest you keep a careful eye on your cooking untilyou are familiar with each function. Remember - notall functions will be suitable for all food types.Rapid ResponseThe Rapid Response setting enables you topre-heat the oven faster than normal. It uses thefan oven element with additional heat from one ofthe elements in the top of the oven. Rangemasterfan ovens heat up quickly; but the Rapid Responsefeature speeds this process up enabling you tocommence cooking sooner.To use the Rapid Response feature, simply turn thefunction control knob to R and set the temperatureyou require. The light on the control panel adjacentto the R symbol will come on. When temperature isreached, the light will go out as will the element atthe top of the oven. The fan element and oven fanwill then continue to maintain your chosen oventemperature.Should you choose to place food into the cold ovenprior to cooking whilst using the Rapid Responsefunction, ensure that cakes etc. are not positionedtoo near the top of the oven.As with any cooking, particularly poultry, meat andready meals, be sure the food is piping hot beforeserving.DefrostThis function operates the fan to circulate coldair only. No heat is applied. This enables small itemssuch as desserts, cream cakes and pieces of meat, fishand poultry to be defrosted.Defrosting in this way speeds up the process andprotects the food from flies. Pieces of meat, fish andpoultry should be placed on a rack, over a tray tocatch any drips. Be sure to wash the rack and trayafter defrosting.Defrost with the oven door closed.Large items, such as whole chickens and joints shouldnot be defrosted in this way. We recommend this becarried out in a refrigerator.Defrosting should not be carried out in a warm ovenor when an adjoining oven is in use or still warm.Ensure that dairy foods, meat and poultry arecompletely defrosted before cooking.
