RECIPES24Pork Satay Skewers with Hot & Sweet Sauce2 Tablespoons minced onions3 Tablespoons vegetable oil2 Tablespoons oyster sauce2 Tablespoons sesame seeds, toastedZest and juice of 1 lemon1 Tablespoon fish sauce1 clove garlic, minced1 Tablespoon soy saucePork Tenderloin, about 1/2- 3/4 poundsAbout 8 leaves of Bibb lettuce, washed and dried1/2 cup dry roasted peanuts, chopped2 Tablespoons cilantro, chopped8 Wooden or metal skewersHot and Sweet Sauce:1/2 cup rice vinegar1/2 cup granulated sugar2 cloves garlic, finely minced1/4 teaspoon salt1 1/2 teaspoons red pepper flakesCombine first 8 ingredients in a medium-sized bowl. Season with salt and black pepper to taste. Slice pork tenderloin into 1/2-inch pieces. Tosspork in marinade to coat and marinate for at least 1 hour up to 1 day. Soak wooden skewers in warm water for about 10 minutes. Thread porkonto skewers. Adjust oven rack to position 4. Preheat broiler for 5-10 minutes. Place skewers on flat broiling rack. Place in oven and align directlyunder the broiler for best coverage. Broil for about 2-3 minutes per side, or until cooked through.For hot and sweet sauce, combine rice vinegar and sugar in a medium-sized sauté pan. Bring to a boil, and cook until sugar dissolves. Removefrom heat add garlic, salt and red pepper flakes. Let cool to room temperature to serve.To serve, place 1 skewer on a leaf of Bibb lettuce. Drizzle with hot and sweet sauce. Sprinkle with peanuts and cilantro.Makes about 8 appetizers.
