Preheat oven to 350° on Pure Convection™. In a medium-sized sauté pan over medium heat, melt butterand sauté apples until soft, about 2-3 minutes. In a large bowl, combine all-purpose flour, wheat flour, oat bran, brown sugar, cinnamon, bakingsoda, baking powder, and salt. In a large measuring pitcher, combine milk, oil, vanilla, eggs. Add milk mixture to dry mixture and stir until moist.Stir in apples.Spray 2 muffin tins with nonstick cooking spray or line with paper liners. Spoon batter into muffin tins. Bake for 20 minutes or until muffins arebrowned and spring back when touched lightly in the center. Lightly brush the top of each muffin with honey. Using your fingertips, mix the dry ingredients and the butter until the mixture resembles a coarse meal. Add thebuttermilk, and mix with a fork just until mixture comes together. Add cheese and mix. Form the dough into a ball, place on a well- floured board,and roll out into 1/28-inch-thick circle. With a 3-inch round biscuit cutter, cut out the biscuits and place on a greased baking sheet. Brush tops withmelted butter. Place in oven and set timer for 10-12 minutes. Bake until golden brown.
