Meat andpoultry are browned on all sides as if they werecooked on a rotisserie. The heated air seals injuices quickly for a moist and tender productwhile, at the same time, creating a rich goldenbrown exterior.When you are convection roasting, it isimportant that you use a broiler pan and griddesigned for broiling for best convectionroasting results. The pan is used to catchgrease spills and the grid is used to preventgrease spatters. Place a rack in the lowest rack position (A).How to Set the Oven for Convection Baking or RoastingTouch the CONVECTION BAKE pad oncefor multi-rack convection baking. Thismode is used for cooking food items onmore than one rack (i.e., 2, 3 or moreracks) at the same time in convectionbake. See the Multi-Rack ConvectionBaking section for more information.Touch the CONVECTION BAKE pad twicefor one rack convection baking. Thismode is used for cooking food items ononly one rack in convection bake.Touch the CONVECTION ROAST pad forconvection roasting.Touch the number pads to set the oventemperature.Touch the START pad.NOTE: If the Auto Recipe™ Conversion Featureis on, it will automatically reduce the set regularbaking temperature by 14°C (25°F) to the appropriateconvection temperature. See Auto Recipe™ Conversionin the Special Features section.To change the oven temperature, touch theCONVECTION BAKE or CONVECTION ROAST padand then the number pads to set the newtemperature.When the oven starts to heat, the changingtemperature, starting at 37.8°C (100°F),will be displayed. When oven reaches thetemperature you set, 3 beeps will sound.Touch OFF pad when finished. You will hear a fan while cooking with convection.The fan will stop when the door is opened, but theheat will not turn off. You may hear the oven clicking during baking. This isnormal. In convection bake modes, for maximum cookingevenness, the fan is designed to rotate in bothdirections, with a pause in between.This is normal.Cookware for Convection CookingBefore using your convection oven, checkto see if your cookware leaves room for aircirculation in the oven. If you are baking withseveral pans, leave space between them. Also,be sure the pans do not touch each other orthe walls of the oven.Paper and PlasticHeat-resistant paper and plastic containersthat are recommended for use in regularbaking can also be used for convectionbaking, but should not be used attemperatures higher than the temperaturerecommended by the cookware manufacturer.Plastic cookware that is heat-resistant totemperatures of 204°C (400°F) can alsobe used.Metal and GlassAny type of cookware will work in yourconvection oven. However, metal pans heatthe fastest and are recommended forconvection baking. Darkened or matte-finished pans will bake fasterthan shiny pans. Glass or ceramic pans cook more slowly.For recipes like oven-baked chicken, use a panwith low sides. Hot air cannot circulate wellaround food in a pan with high sides.
