This mode is used forcooking food items on more thanone rack (i.e., 2, 3 or more racks) atthe same time in convection bake.See Multi-Rack Baking section formore information.Touch the CONVECTION BAKE padtwice (CONVECTION BAKE 1 GRILLEmode) for one-rack convectionbaking. This mode is used forcooking food items on only onerack in convection bake.Touch the CONVECTION ROAST padfor convection roasting.Touch the number pads to set thedesired oven temperature.Touch the START pad.To change the oven temperature, touchthe CONVECTION BAKE or CONVECTIONROAST pad and then the number padsto set the new temperature.When the oven starts to heat, thechanging temperature, starting at 100°F(38°C), will be displayed. When ovenreaches the temperature you set, 3 beepswill sound.Touch RESET/OFF pad whenfinished. You will hear a fan while cooking withconvection. The fan will stop when the dooris opened, but the heat will not turn off. You may hear the oven clicking duringbaking. This is normal.Cookware for Convection CookingBefore using your convection oven,check to see if your cookware leavesroom for air circulation in the oven.If you are baking with several pans, leavespace between them. Also, be sure thepans do not touch each other or thewalls of the oven.Paper and PlasticHeat-resistant paper and plasticcontainers that are recommended foruse in regular ovens can be used inconvection ovens. Plastic cookware thatis heat-resistant to temperatures of400°F (204°C) can also be used.Metal and GlassAny type of cookware will work in yourconvection oven. However, metal pansheat the fastest and are recommendedfor convection baking. Darkened or matte-finished pans will bakefaster than shiny pans. Glass or ceramic pans cook more slowly.For recipes like oven-baked chicken,use a pan with low sides. Hot air cannotcirculate well around food in a pan withhigh sides.How to Set the Oven for Convection Baking or RoastingConvection Roast Good for large tender cuts of meat, uncovered.The convection fan circulates the heatedair evenly over and around the food.Meat and poultry are browned on allsides as if they were cooked on arotisserie. The heated air seals in juicesquickly for a moist and tender productwhile, at the same time, creating a richgolden brown exterior.When you are convection roasting, itis important that you use a broiler panand grid designed for broiling for bestconvection roasting results. The pan isused to catch grease spills and the gridis used to prevent grease spatters. Place the rack in the lowest rackposition (A).When baking cookies, you willget the best results if you use aflat cookie sheet instead of apan with low sides.
