USING YOUR GAS BURNER COMPONENT(continued)How to Select Flame SizeWatch the flame, not the knob, as you reduce heat. The flame size on a gas burner should match thecookware you are using.FOR SAFE HANDLING OF COOKWARE, NEVERLET THE FLAME EXTEND UP THE SIDES OFTHE COOKWARE. Any flame larger than the bottomof the cookware is wasted heat and only serves toheat the handle.CookwareAluminum: Medium-weight cookware isrecommended because it heats quickly and evenly. Most foods brown evenly in an aluminum skillet.Use saucepans with tight-fitting lids for cooking withminimum amounts of water.Cast Iron: If heated slowly, most skillets will givesatisfactory results.Enamelware: Under some conditions, the enamel ofsome cookware may melt. Follow cookwaremanufacturer’s recommendations for cookingmethods.Glass: There are 2 types of glass cookware-thosefor oven use only and those for surface cooking(saucepans, coffee and teapots). Glass conducts heatvery slowly.Heatproof Glass Ceramic: Can be used foreither surface or oven cooking. It conducts heatvery slowly and cools very slowly. Check cookwaremanufacturer’s directions to be sure it can be usedon gas cooktops.Stainless Steel: This metal alone has poor heatingproperties, and is usually combined with copper, aluminum or othermetals for improved heatdistribution. Combination metal skillets generallywork satisfactorily if they are used at medium heatas the manufacturer recommends.Wok CookingWe recommend thatyou use only a flat-bottomed wok. They areavailable at your localretail store.Do not use woks thathave support rings.Use of these types of woks, with or without the ring inplace, can be dangerous.Placing the ring over thebume{grate may cause the burner to work improperlyresultin~ in carbon monoxide levels above allowablecurrent &mdards. This could be dangerous to yourhealth. Do not try to use such woks without the ring. You could be seriously burned if the wok tipped over.Stove Top GrillsDo not use stove top grills on your sealed gas burners. If you use the stovetop grill on the sealed gas burner it will cause incomplete combustion andcan result in exposure to carbon monoxide levels above allowable currentstandards. This can be hazardous to your health.18
