Remember, your new oven may performdifferently than the oven it is replacing.Baking and Roasting ModesSelect a mode for baking and roasting based on thetype and quantity of food you are preparing. Whenpreparing baked goods such as cakes, cookies, andpastries always preheat the oven first. Follow reciperecommendations for food placement. If no guidelinesare provided, center food in the oven.BakeThe bake mode is intended for single rack cooking. Thismode uses heat primarily from the lower element butalso from the upper element to cook food. To use thismode press the Bake pad, enter a temperature, andthen press Start. Preheating is generally recommendedwhen using this mode.Convection Bake Multi RackThe Convection Bake Multi Rack mode is intendedfor baking on multiple racks at the same time. Thismode uses heat primarily from the rear element, whenavailable, but also heat from the upper and lowerelements, along with air movement from the convectionfan to enhance cooking evenness. Your oven isequipped with Auto Recipe Conversion, so it is notnecessary to convert the temperature when using thismode. Baking time might be slightly longer for multipleracks than what would be expected for a single rack. Touse this mode press the Convection Bake pad, enter atemperature, and then press Start. Always preheat whenusing this mode.Convection RoastThe Convection Roast mode is intended for roastingwhole cuts of meat on a single rack. This mode usesheat from the lower, upper, and rear elements alongwith air movement from the convection fan to improvebrowning and reduce cooking time. It is not necessary toconvert temperature. Check food earlier than the recipesuggested time when using this mode or use a meatprobe. To use this mode press the Convection Roastpad, enter a temperature, and then press Start. It is notnecessary to preheat when using this mode.WarmTo use this mode, press the Warm pad then pressStart. Cover foods that need to remain moist and donot cover foods that should be crisp. Preheating isnot required. Do not use warm to heat cold food otherthan crisping crackers, chips or dry cereal. It is alsorecommended that food not be kept warm for morethan 2 hours.Broiling ModesWhen broiling, the door should remain OPEN. Monitorfood closely while broiling. Use caution when broilingon upper rack positions as placing food closer to thebroil element increases smoking, spattering, and thepossibility of fats igniting. For best performance centerfood below the broil heating element.Try broiling foods that you would normally grill. Adjustrack positions to adjust the intensity of the heat to thefood. Place foods closer to the broil element when aseared surface and rare interior is desired. Thicker foodsand foods that need to be cooked through should bebroiled on a rack position farther from the broiler or byusing Broil Lo.Broil HiThe Broil Hi mode uses intense heat from the upperelement to sear foods. Use Broil Hi for thinner cuts ofmeat and/ or foods you prefer less done on the interior.To use this mode press the Broil pad once and thenpress Start. It is not necessary to preheat when usingthis mode.Broil LoThe Broil Lo mode uses less intense heat from the upperelement to cook food thoroughly while also producingsurface browning. Use Broil Lo for thicker cuts of meatand/or foods that you would like cooked all the waythrough. To use this mode press the Broil pad twice andthen press Start.
