This is not necessary whenbaking pies or casseroles. Dark, rough or dull pans absorb heatresulting in a browner, crisper crust.Use this type for pies. Shiny, bright and smooth pans reflectheat, resulting in a lighter, moredelicate browning. Cakes and cookiesrequire this type of pan.Pan PlacementFor even cooking and proper browning,there must be enough room for aircirculation in the oven. Baking results willbe better if baking pans are centered asmuch as possible rather than beingplaced to the front or to the back ofthe oven.Pans should not touch each other or thewalls of the oven.
