½ cup peanuts, chopped½ cup sultana½ cup brown sugar, firmly packed1½ cups carrot pulp½ cup oil2 eggs, lightly beaten¼ cup sour creamGrease and line a 25 cm x 15 cm loafpan. Sift flour and baking powder into alarge mixing bowl, add nutmeg, cinnamon,cardamom, peanuts, sultana, brown sugarand carrot pulp, stir to combine. Add eggs,oil and sour cream. Beat with electric mixer,using medium speed until all ingredients arewell blended. Pour into loaf pan. Bake at180 °C for 1 hour or until cake is cookedwhen tested with a skewer. Remove fromoven, stand in cake pan for 5 minutesbefore inverting out onto a wire cake rack.47
