POSITIONINGThe fryer must be placed under an exhaust hood witha fire retardant system. Your ventilation hood, wheninstalled, must conform to the current standards. ALLconnections and placement must comply with currentlocal and national codes. It is the responsibility of theowner and local installer to comply with theseregulations when installing the fryer.Counter model and floor model fryers must berestrained to prevent tipping when installed in orderto avoid splashing, spilling, etc. of hot liquid. Therestraining method may be a manner of installation orby separate means.LEVELINGThe fryer will operate at its highest efficiency whenproperly leveled. Place a level on fryer vessel from sideto side. For fryers on legs, the bottom foot of the leg isadjustable. Looking from the bottom of the foot, turnclockwise to decrease height or counter clockwise toincrease height until level. For fryers on casters, thecasters are adjustable by loosening the jam nut andturning the caster in or out. When the desired level isreached, tighten the jam nut. Adjustments of more than3/4 ” are not recommended on any caster. The sameprocedure should be followed to level the fryer fromfront to back.Figure 2-2RESTRAINING DEVICESOn fryer installations with casters, casters and jam nutsmust be completely tightened. Adequate means mustalso be provided to limit the movement of theappliance.ELECTRICALCONNECTIONThe Keating Instant Recovery ® Electric fryer isequipped with a three wire terminal block for customerconnections. The terminal block is located behind thefryer door on the right side behind a panel (held inplace by two screws). Compare the fryer terminalconnections to the appropriate wiring diagram for thefryer (see pages 17 thru 23) to see if the fryer isconnected three phase or single phase. All wires/cords,plugs, receptacles and circuit breakers must be sizedadequately for the full load rating of the fryer asspecified by local codes, or in the absence of localcodes, by the current National and Canadian ElectricalCodes as applicable.The Keating Electric Fryer is also equipped with agrounding lug next to the terminal block. For propergrounding procedures, see local codes or, in theabsence of local codes, by the current National andCanadian Electrical Codes as applicable.NOTE: A copy of your wiring diagram is shipped withyour equipment.NOTE: For fryers rated at 208-240 volts, theamperage ratings marked on the nameplates of thefryers are listed at 240 volts as required by ETL. If yourfryer is to be fed by a 208 or 220 volt system, consultthe Keating Fryer Specifications on pages 24 and 25 todetermine the full load rating of the fryer.NOTE: Fryers with Safe & Easy ® Filters (modelBBSE or TSSE) or Central Filters will have separate120 volt control circuit connections.NOTE: A copy of your wiring diagram is located onthe inside of the door.NOTE: A hole has been punched in the rear of thefryer cabinet for a cord or conduit exit.
