Remove roller panand discard canola oilleft in the pan.13. Disassemble oil rollerby sliding roller off ofhandle.Important Note: Roller brushes should becleaned daily and discarded at the end of theweek.Tip: Cleaning Instructions are guidelines. Cleanmore frequently if needed.14. Wash, rinse, sanitizer and air -dry crumb baffle,grease drawer, detailing tool, broiler brush,nugget screen, lower broiler frames, storagecompartment, roller pan, oil roller and handle.• Wash, rinse, sanitizeand air-dry all parts incompartment sink.• Replace all parts aftercleaning.15. Clean all exterior broiler surfaces• Wring out a clean, sanitized towel well andspray with degreaser solution.• Wipe all exterior surfaces.• Turn towel over and wipe surface again toremove excess degreaser.16. Sanitize all exterior broiler surface• Wring out a clean, sanitized towel well andspray with sanitizer.• Wipe all exterior surfaces.• Leave sanitizer on surfaces for at least 15seconds to kill any remaining bacteria.• Turn towel over and wipe surface again toremove excess sanitizer.• Clean the control screen only with a damp softcloth.17. Reinstall partsremoved for cleaning,after they have air-dried.Weekly CleaningA. Exhaust FanThorough cleaning is required at least oncea week of the fan. Additional cleaning of theexhaust fan may be necessary to avoid build-upinside the exhaust system on the upper broilergrate platen.18. Remove the three(3) thumb screwslocated around themotor.Important: Be gentlewith the electricalconduit whenremoving motor,electrical conduit isnot designed to bedisconnected. Do notattempt to disconnectthe motor conduit.
