If any burnedfood particles or carbon build-up appear onupper or lower broiler grates, clean them withbroiler brush. (See Garland Broiler: CleaningGarland Broiler after Each Batch).≠ Verify that Duke holding station has beenpre-heated, that compartment for holdingsausage (SAUS) has a black, solid lid (SOLD)and that compartment for holding bacon(BACN) has a gray, vented lid (VENT).Ingredients QuantitiesBacon half-slices Up to 30 per batchSausage patties Up to 10 per batchEquipment/Items Used ForUsed For Clear foodservice gloves ormetal-handled tongsPlacing bacon or sausageon broilerFood film Wrapping unused baconor sausageDated and labeledstickers Monitoring shelf lifeMetal spatula or metal-handled tongsRemoving cooked baconor sausage from broilerDuke holding pan Holding bacon or sausage1. Remove thawed bacon or sausage fromrefrigerator. Cook only amount that will be usedwithin 30 minutes.2. 2. Press PRESS & GO icon to bring broiler outof standby mode, if needed. Display will showavailable products to be cooked on the broiler.It is NOT necessary to coat broiler grates with oil whencooking bacon or sausage.CAUTION: To save energy, broiler will automaticallyclose and enter sleep mode unless a cooking cycleis started within 3 minutes from end of previouscooking cycle.• Load bacon or sausage as soon as broiler is ready.• If unexpectedly delayed so that you are not ableto finish loading product within 3 minutes, pressABORT icon to reset 3-minute timer3. Load bacon or sausage on broiler.• Bacon:— Load up to 30 half-slices of bacon on broiler,working from front to back. Position sliceshorizontally on broiler grates.— Position bacon half-strips so they are on lefthalfor right half of lower broiler grate (notoverlapping outer or inner edges of broilergrate).— Make sure bacon half-strips do not touch.• Sausage:— Load up to 10 sausage patties (5 rows of 2patties), working from front to back.— Position sausage so that patties are centeredon left half or right half of lower broiler grate(not overlapping outer or inner edges of broilergrate).— Make sure sausage patties do not touch.(Always check with Chick-fill-A store Manager for latest cooking methods)
