Part # 4523343 Rev 2 (03/04/10)Page 12Interior Cleaning of Standard AluminizedSteel Interior SurfacesThe oven sides and top linings are formed of heavy gaugesteel with an aluminum fused into its surface to providefor the reflectance of heat back to the food being preparedand to virtually eliminate the possibility of rust formationEstablish a regular cleaning schedule or wipe off on the sameday when spillovers occur1 Cool down oven2 Remove oven racks3 Lift rack guides on either side of oven off of holders, pullthe top away from the cavity wall, when it’s cleared theclips push down and remove Racks and guides maybe run through dishwasher while oven cavity is beingcleaned4 Use a concentrated detergent on a plastic pad to removeburned on soil Do Not Use Steel Wool, Oven Cleaner OrAbrasive Powders These will remove the aluminum Rinsewith warm water on a soft cloth Be sure to remove alltraces of detergent Any discoloration, which may remainafter the soil build-up has been removed, will not affectthe performance of the oven5 To reinstall reverse procedure Place the bottom of therack guide against the cavity wall Keeping the top pulledaway from the wall lift up Push the top of the rack guideagainst the wall and push down locking it into placeOpen Top BurnersCleaning of the range top burner is a simple procedure, and,if done at regular intervals will prolong the life of the rangeand ensure good flame characteristics1 The most common problem with open burner ranges isspillage Once the burner ports are partially plugged withfood, the air-to-gas mixture is disturbed and results in aninefficient burner2 Wipe any spills as they occur3 Grids and trays should be removed daily, washed, rinsedand dried thoroughly4 Use a wire brush to clean the ports of the burners Igniteand check for clogged holes5 If any clogged holes are apparent, the burner should belifted out and brushed inside and out with a small Venturibrush Each port on the burner itself should be cleanedwith a properly sized wire or thumb drill Wash with soapand hot water if grease is observed on the burners Drythoroughly6 When reinstalling the open top burner head be sure theburner ports are lined up correctly to the pilot On thecast burner head there is an extended finger with portopenings, when this is in line with the pilot, the burner isinstalled correctlyEXTENDED FINGER PILOT7 If an abnormal flame appears around the edges, it isusually a sign of grease dirt in the throat of the burnerRemove the burner venturi (main body that the burnerheads sit on) to access the air shutter opening Removegrease and dirt from the air shutter area carefully Do notadjusting the shutter setting The air shutter allows theproper amount of air to mix with the flow of gas comingin from your valve/thermostat orifice and should not beadjusted unless by a license gas fitter technicianCast Iron Top & GratesCast iron top and grate(s) can be cleaned with mild soapand warm water For baked on material, a wire brush can beused Dry thoroughly Lightly coat with vegetable oil to helpprevent rust from formingMAINTENANCE AND CLEANING Continued
