Topreheat, set the oven at the correct temperature.Preheating is necessary for good results whenbaking cakes, cookies, pastry and breads.For ovens without a preheat indicator light or tone,preheat 10 minutes.Baking results will be better if baking pans arecentered in the oven as much as possible. Pansshould not touch each other or the walls of theoven. If you need to use two shelves, stagger thepans so one is not directly above the other, andleave approximately 11⁄2≤ between pans, fromthe front, back and sides of the wall.Cookiesheets(on some models)As an added convenience for you when using yournew convection oven, we have provided three cookiesheets.The two large ones are for use on the flatshelves. The small cookie sheet is for use on theoffset shelf. The cookie sheets provide uniformbaking. They are dishwasher safe, durable andwill not warp or rust.Insulated cookie sheets, with an easy grip lip,are made of two layers of aluminum with aninsulating layer of air for uniform baking.Aluminum is an oven baking metal. It is not,however, a non-stick surface. If your reciperecommends greasing, spray lightly with a non-stick vegetable coating; wipe off the excess. Ifpreferred, put a light film of shortening on thecookie sheet. Cookies should cool at least 2minutes before removing them from the sheet.We recommend that you use Convection Bakefor multi-shelf cooking. For two-shelf baking,place the offset shelf in the bottom (A) shelfposition. Place the straight shelf in the third (C)shelf position. Place the small cookie sheet onthe offset rack. Always use a cool cookie sheet.On double oven models, when baking on threeshelves, divide the oven into thirds by placingthe offset shelf in the third (C) shelf positionand straight shelves in the first (A) and fourth(D) shelf position. See the Convection Bakingsection.Your insulated cookie sheets can be used forconvection baking or regular baking. However,if you choose not to use Convection Bake forbaking cookies and are baking on the insulatedcookie sheets, you may find that therecommended baking time needs to beincreased 3 to 5 minutes.AluminumfoilYou can use aluminum foil to line the broilerpan and broiler grid. However, you must moldthe foil tightly to the grid and cut slits in it justlike the grid.Aluminum foil may also be used to catch a spillover.Never entirely cover a shelf with aluminum foil.This will disturb the heat circulation and resultin poor baking.A smaller sheet of foil may be used to catch aspillover by placing it on a lower shelf severalinches below the food.Cut slits in the foil just like the grid.
