47Baked goods▯ We recommend dark pans of metal since theseabsorb the heat better. Place the pan in the middleof the wire rack.▯ For sheet cakes without greaseproof paper, oil thepan slightly.▯ Small baked items such as cream puffs, cookies orpastries can be baked on two levels, 1+3 or 2+4.▯ If you bake on several levels it is normal that thetrays are not done at the same time. Leave the lowertrays bake a little longer or put them in the ovenearlier the next time.▯ Before cutting, let the baked goods cool on a rack.▯ If the baked goods are too dark on the bottom:insert one level higher, select a lower temperature.If the baked goods are too dark on the top: insertone level lower, select a lower temperature, andextend the baking time a bit.▯ If the cake is too dry, set the temperature a littlehigher. If the cake is not cooked on the inside, setthe temperature a little lower.Baking times cannot be shortened by selecting ahigher temperature; it is better to select asomewhat lower temperature.▯ If the cake collapses: use less liquid or set thetemperature 50°F (10 °C) lower. Do not open theoven door too soon.▯ The cake rises only in the middle: grease the edgesof the pan.▯ If the cookies are hard to take off the sheet, insertthe sheet in the hot oven again and remove thecookies while they are still warm.▯ If the cake does not come out of the pan when yhouturn it over, use a knife to loosen the cake aroundthe edges.
