(on some models)If your model has a door latch, do not lock the oven door with the latch during convection cooking. The latch is used forself-cleaning only.The convection oven fan shuts off when the oven door is opened. DO NOT leave the door open for long periods of timewhile using convection cooking.To help you understand the differencebetween convection bake and roast andtraditional bake and roast, here are somegeneral guidelines.Convection Bake Preheat the oven. See the Using the Oven–Preheating and Pan Placement section. Ideal for foods cooked on multiple shelves. Good for large quantities of baked foods. Good results with cookies, biscuits, brownies,cupcakes, cream puffs, sweet rolls, angel foodcake and bread.The convection fan circulates the heatedair evenly over and around the food.Convection Roast Good for large tender cuts of meat, uncovered.The convection fan circulates the heatedair evenly over and around the food. Usingthe grid and broiler pan provided, heatedair will be circulated over and around thefood being roasted. The heated air seals injuices quickly for a moist and tenderproduct while, at the same time, creatinga rich golden brown exterior.Roasts or poultry should be cooked on shelfposition (A).When you are convection roasting it isimportant that you use the broiler pan andgrid for best convection roasting results.The pan is used to catch grease spills andthe grid is used to prevent grease spatters. Place the shelf in shelf position (A). Place the grid on the broiler pan.In a convection oven, a fancirculates hot air over, under andaround the food. This circulating hotair is evenly distributed throughoutthe oven cavity. As a result, foodsare evenly cooked and browned—often in less time than with regularheat.GridBroiler panAuto Recipe ™ ConversionYou can use your favorite recipes in theconvection oven.When using CONVECTION BAKE, the oven willautomatically convert the oven temperature fromregular baking to Convection Bake temperatures.Using the number pads, enterthe temperature recommendedin the recipe.Touch the START pad.The display will show thetemperature you entered from yourrecipe. The oven will automaticallyconvert it to the convection cookingtemperature.Touch the CLEAR/OFF pad whenbaking is finished. Use pan size recommended in the recipe. Some package instructions for frozencasseroles, main dishes or baked goods havebeen developed using commercial convectionovens. For best results in this oven, preheat theoven and use the temperature, for regularbaking, on the package.
