ENGLISH• 11 •How to make a good Espresso coffee:1 Follow the procedure described under “Pre-paration”.2 Select the correct filter basket (10 or 11) andinsert it in the filter holder (9).Use the small filter for 1 cup and the largefilter for 2 cups of espresso.Then insert the filter holder (9) into thebrewing head (11) to warm-up3 Wait until the machine has reached thecorrect temperature with filter holder inserted(heating time of about 6 minutes).Use this time to set table, prepare cups,coffee, milk, etc4 After the warm-up period, remove the warmfilter-holder (9) from the brewing head andfill with correctly ground espresso coffeeusing the measuring spoon provided.Place one level measure of coffee in basketfor each cup of espresso. Do not overfill.Gently tamp down coffee with the tamper(18) provided. Do not compress too firmly.5 Clean any excess coffee from the rim offilter holder (9). Insert filter holder into brewhead by holding handle approximately 45degrees to the left as you face machine.When properly aligned,move handle firmlyto the right to lock into position.The handle should point to the front of themachine or slightly to the right.6 Place one or two espresso cups on the drip plateto line up with the spouts of the filter holder. De-press hot water/brew switch (2) to pos. “On”.Espresso will start to flow into cups.7 When cups are 3/4 full, release brew switchto “Off”. The more water you allow toflow, the weaker the coffee. When properlymade, the espresso will have a light brownfoam “crema” floating on the top.If not, refer to “In the event of faultyfunction”.8 Remove cups and serve.9 To make more espresso, carefully and slowlyremove the filter holder by moving handle tothe left. Be careful as hot water will be on topof the coffee grinds in the holder. Some waterwill continue to drip from brewing head asfilter holder is removed. That is normal anddue to the pump pressure in the system. Knockout used coffee grinds from filter. For moreespresso repeat steps 4 to 8 abovePreparing cappuccino:When preparing to make a cappuccino, haveall of the ingredients at hand as well as afrothing pitcher (or mug) halffilled with skimmedor low-fat milk and cups that are larger (6 oz.)than those used for espresso.Frothing Milk:The higher the fat content in the milk the denserthe froth will be. The Turbo-Frother (8) or thecappuccino maker pos.24 will give you all thefroth required but don’t let milk come to a boil.It may require two or three attempts to “becomean expert” but you will be successful at frothingmilk if you give it a chance. Swivel the Turbo-Frother steam nozzle (or milk frother) slightlyoutward so that you can get the frothing pitcherunder the nozzle without knocking the base ofthe machine.How to use coffee wafersMake sure you use the right filter (28) when makingespresso with coffee wafers.Once the coffee machine is heated, remove the por-tafilter (9) and put in the wafer. Make sure that thewafer paper remains completely inside the portafilter.Insert the portafilter into the coffee machine byrotating it 45° to the left.Then lock the portafilter into place by rotating it tothe right. The portafilter handle should be perpen-dicular to the front of the machine or rotatedslightly to the right.Then follow steps 6 to 8 of “ How to make agood Espresso coffee”.OPTIONAL“Perfect crema” Filter (13)Even when the coffee is not properly ground,the “perfect cream filter” will help produ-ce the foamy ‘cream’ typical of fine espresso.You can use the “perfect cream filter” witha single or double dose of ground coffee byusing the special measuring scoop.To ensure perfect performance, clean your“perfect cream filter” every day prior touse. Should your “perfect cream filter”become clogged, immerse it for a few secondsin boiling water.
