Removethe flue cover by liftingit straight up. Be careful not to scratch thesurrounding stainless steel surfaces duringremoval of the flue cover.The two inner screws are clamping screws forsecuring the griddle in place. Loosenthese twoscrews before leveling. Do not remove thesetwo screws.The two outer screws are leveling screws. Do notremove these two screws. They can be turnedto level the griddle or to provide a forward slopeto help grease and oils to drain away from thefood being cooked. After the first few uses,youwilt be able to judge the slope best suited for thefoods you are cooking and personal preference.After leveling the griddle, tighten the clampingscrews to secure griddle in place. Hand tightenscrews; do not over-tighten.Seasonthe griddleUsingthe griddle_4Before using the griddle for the first time, itmust be seasoned,tf the griddle has not been used for a periodof time, it should be reseasoned.1. Cleon the griddle thoroughly with hot, soapywater to remove any protective coating.2. Wipe the surface using a solution of 1quart water and 1 cup white vinegar. Drythoroughly.3. Use a paper towel and wipe 1 tablespoonvegetable oil evenly across the griddle: Do notuse corn oil as it can get sticky.4. Turn the control knob to 400°F forapproximately 30 minutes. Turn the heat offwhen the oil starts to shimmer.5. Repeat Step 3. Be sure to cover the entiresurface with the oil.6. Allow the griddle to coo!. Wipe the entiresurface of the griddle using a heavy cloth toremove the oil. The griddle is now ready touse.The griddle surface is o combination of highlypolished Type 304 stainless steel and analuminum core plate for even heat distribution.It is normal for it to darken with use as oils cookonto the surface to provide a stick-resistantbase or "seasoning."The griddle is thermostatically controlled andcan be set to maintain any temperature from200°F to 450°F.NOTE:Unlike the surface burners, which useelectric igniters, the griddle uses a Glo-Bar forignition. It takes approximately/45 seconds forthe Glo-Bar to reach temperature. Gas is onlysupplied to the griddle once the Glo-Bar reachestemperature.To heat the griddle,push in the control knob andturn to the desiredtemperature setting.
