Observe thestanding times.STANDING TIMESIndividual portions of food may be cooked almostimmediately after defrosting (5 minutes standingtime for steaks, 15 minutes for fruit and pastry). Itis normal for large portions of food to be frozenin the centre. Before cooking, allow to stand for aminimum of one hour. During this standingtime, the temperature becomes evenlydistributed and the food is defrosted byconduction. NB If the food is not going to becooked immediately, store it in the refrigerator.Never refreeze defrosted food without firstcooking it.JOINTS AND POULTRYIt is preferable to place the joints on an upturnedplate or plastic rack so that they are not restingin the juices. It is essential to protect delicate orprojecting parts of this food with small pieces offoil to prevent these parts from cooking. It is notdangerous to use small pieces of foil in youroven, provided they do not come into contactwith the oven walls.
