If you use adifferent wok, make sure that it fits the cradle. Woks vary verywidely in size and shape. It is important that the wok sitsdown on the pan support – however, if the wok is too small,the cradle will not support it properly (Fig. 2.9).The cradle should be used on the wok burners only. Whenyou fit the cradle, check that it is supported properly on a pansupport and the wok is sitting level in the cradle (Fig. 2.10).The cradle will get very hot in use – allow plenty of time for itto cool before you pick it up.The Griddle Plate (optional)The griddle plate fits the left-hand pan support, front toback (Fig. 2.11). It is designed for cooking food on directly.DO NOT use pans of any kind on it. The griddle plate surfaceis non-stick and metal cooking utensils (e.g. spatulas) willdamage the surface. Use heat resistant plastic or woodenutensils.nn DO NOT put it crossways – it will not fit properly andwill be unstable (Fig. 2.12).nn DO NOT put it on any other burner - it is notdesigned to fit on any of the other pan supports.Position the griddle plate over the hotplate burners restingon the pan support. Check that it is securely located.The griddle plate can be lightly brushed with cooking oilbefore use (Fig. 2.13). Light the hotplate burners. Adjust theflame heights to suit.Preheat the griddle plate for a maximum of 5 minutesbefore adding food.
