Stilton,Roule etc.Glaze:1 egg, beatenIngredients225 g (8 oz) self-raising flour3 ml ( 1/2 tsp) salt100 g (4 oz) shredded suet105 ml (7 tbsp) cold waterSuetcrust Pastry1. Mix together flour, salt and suet.2. Add water and mix to a soft dough. Knead lightly untilsmooth.Savoury Potato Plait Serves 4-6Dish: baking sheet (round)Oven Accessory: glass turntable + metal tray1. Cook potato in a shallow dish with 60 ml (4 tbsp) water,covered for 3 mins. on HIGH power. Drain.2. Preheat oven on CONVECTION 210°C.3. Roll out the pastry to an oblong 25 x 27 cm (10 x 11"). Liftonto baking sheet. With a knife, cut each side of the longedges diagonally at 2.5 cm (1") intervals, to give stripswhich will become plaits.4. Arrange layers of potato, onion and apple down the centreof the pastry. Season. Sprinkle over the cheese.5. Brush the pastry strips with beaten egg and fold alternatelyover the mixture to form a plait.6. Glaze the complete plait with beaten egg. Cook onCombination: CONVECTION 230°C + SIMMER powerfor 15-20 mins. or until crisp and golden.PastryIngredients500 g (1 lb 2 oz) readymade puff pastry300 g (11 oz) sausagemeat1 eggSausage Rolls Makes 12Oven Accessory: enamel shelf1. Preheat oven on CONVECTION 210°C. Roll pastry out to athickness of 5mm and into a 30 x 30cm square, trim any looseedges.2. Cut square into four.3. Pat hands with flour and roll 1/4 sausage meat into a long, thinsausage shape and lay on one of the pastry squares, brushedges with egg and roll into sausage shape, cut into three.Repeat three times with the other ingredients. Place onenamel shelf.4. Brush each sausage roll with beaten egg and bake onCONVECTION 200°C for 30 mins.Variations:● Mix 1-2 tsp of chilli flakes with the sausage meat and thensprinkle top with extra flakes before baking.● Sprinkle top of the sausage rolls with a little grated cheesebefore baking.P A S T R Y
